About this recipe

Overnight oats with mango and lime are a cool, creamy, no-cook breakfast for hot mornings. In the evening, simply combine the oats with plant-based milk, chia seeds, and a little honey or maple syrup; in the morning, add fresh fruit and granola. This quick, light, and convenient summer breakfast holds up well in a jar and is easy to take to work, the beach, or on a trip.

Ingredients

Servings: 2

Base

  • 120 g rolled oats

  • 250 ml coconut milk beverage or another plant-based milk

  • 150 g coconut yogurt

  • 2 tablespoons chia seeds

  • 1 tablespoon maple syrup

  • 1 teaspoon lime juice

  • 1/2 teaspoon finely grated lime zest

  • a pinch of salt

Toppings

  • 1 ripe mango (about 250 g flesh)

  • 40 g granola

  • 1 tablespoon shredded coconut

  • a few mint leaves

Steps

  1. In a bowl, mix the rolled oats, coconut milk beverage, coconut yogurt, chia seeds, maple syrup, lime juice and zest, and a pinch of salt.

  2. Divide the mixture between 2 jars or bowls, cover, and refrigerate for at least 8 hours, until thickened.

  3. In the morning, peel the mango and cut the flesh into cubes or thin slices.

  4. Arrange the mango over the oats and sprinkle with the granola and shredded coconut.

  5. Add the mint leaves and serve immediately, preferably well chilled.
