The dish comes together in a dozen or so minutes, and the contrast of sweet cherries, salty accents, and fragrant basil defines its flavor.

Toasts

  • 4 slices sourdough bread or good-quality wheat challah

  • 1 tablespoon olive oil

Toppings

  • 1 burrata (about 125 g)

  • 1 cup cherries, pitted and halved

  • 1 cup cherry tomatoes, halved

  • 1 small handful of fresh basil

  • 1 tablespoon balsamic vinegar or balsamic glaze

  • 1 teaspoon honey

  • 1/2 teaspoon salt

  • 1/4 teaspoon freshly ground black pepper

  • optional: a pinch of chili flakes

Steps

  1. Pit and halve the cherries. Halve the tomatoes as well, and tear the basil into smaller leaves. In a small bowl, combine the cherries, tomatoes, balsamic vinegar, honey, salt, pepper, and, if desired, a few chili flakes.

  2. Brush both sides of the bread slices with olive oil and toast them in a dry skillet or in a toaster until golden and crisp, about 3–4 minutes.

  3. Arrange the toasts on plates and place torn burrata on each serving. Gently spread it with a spoon so that the creamy interior lightly covers the bread.

  4. Spoon the prepared cherries and tomatoes over the burrata, along with a small amount of juice from the bowl. This will make the toasts juicy while still crisp.

  5. Sprinkle everything with basil and serve right away, preferably with the toasts still slightly warm and the fruit and cheese cool.
