Cherry and apple kompot combines tart cherries with the gentler sweetness of apples. Cherries give the drink its color and bold fruit flavor, while apples round it out without the need for much added sugar. A small piece of cinnamon stick adds a delicate warm-spice aroma. Simmer the apples briefly before adding the cherries so both fruits flavor the drink without falling apart completely.

Ingredients

Servings: 6

  • 300 g cherries

  • 2 apples

  • 1.5 liters water

  • 1 tablespoon sugar

  • a small piece of cinnamon stick

Steps

  1. Wash the cherries and pit them if needed. Remove the apple cores, then cut the apples into large pieces. The apples will mellow the tart cherry flavor.

  2. Bring the water to a boil with the sugar and piece of cinnamon stick. Add the apples first, then add the cherries after 2–3 minutes.

  3. Simmer over low heat for 10–12 minutes, until the cherries color the water and the apples soften without completely breaking down. If needed, stir gently just once.

  4. Remove the pot from the heat and let the kompot stand briefly so the apple and cinnamon mellow the cherry flavor. Serve with the fruit, or strain before chilling.
