Tart gooseberries are briefly simmered with sugar, while fresh mint lends a delicate, cooling aroma. A short rest allows the fruit to release its juice and the flavors to balance. Serve the kompot warm right away, or chill it and add ice cubes. With only a few ingredients, it is easy to make the drink as sweet or tart as you like.

Ingredients

Servings: 6

  • 500 g gooseberries, stems removed

  • 1.5 L water

  • 80–120 g sugar

  • 1 large sprig fresh mint

  • 1 tablespoon lemon juice, optional

Steps

  1. Rinse the gooseberries and remove the stems. If desired, halve any larger berries so they release their juice more quickly.

  2. Pour the water into a pot, add the sugar, and heat until the sugar dissolves completely.

  3. Add the gooseberries to the boiling water, reduce the heat, and cook, covered, for 8–10 minutes, just until the fruit softens without falling apart.

  4. Remove the pot from the heat and add the mint. Stir in the lemon juice if desired, then let the kompot stand for 10–15 minutes so the flavors can meld.

  5. Serve the kompot with the fruit, or strain it through a fine-mesh sieve. Enjoy it warm or refrigerate until chilled.
