This sea buckthorn tea is a bold drink made with black tea, sea buckthorn berries, lemon, and honey. Sea buckthorn gives the infusion an intense tart flavor, lemon adds freshness, and honey balances the berries’ astringency. Add the honey only after the tea cools slightly so its aroma remains distinct. It is a more distinctive homemade fruit tea than an ordinary cup of tea with lemon.

Ingredients

Servings: 2

  • 500 ml water

  • 2 tablespoons sea buckthorn berries

  • 1 teaspoon honey

  • 1 lemon slice

  • 1 black tea bag

Steps

  1. Bring the water to a boil and let it stand for a minute before steeping the black tea. Prepare the sea buckthorn berries separately, and add the lemon slice only after steeping.

  2. Steep the black tea for 3–4 minutes and remove the tea bag. Add the sea buckthorn berries to the hot infusion so they release their tart, fruity flavor.

  3. Let the sea buckthorn infusion stand for a few minutes. If the berries are whole and firm, you can gently press them with a teaspoon to release more juice.

  4. Add the lemon slice and honey when the tea is no longer boiling hot. Stir and serve right away, or strain if you do not want berries in the mug.
