Bacon and potato casserole is a hearty meal of thinly sliced potatoes layered with browned bacon, onion, cream, and cheese. Bacon adds an assertive, gently smoky flavor, while cream binds the potato layers into a creamy casserole. Briefly parboil the potatoes or slice them very thinly so the centers become tender in the oven. Rest the casserole after baking so it slices cleanly into even portions.

700 g potatoes
150 g bacon
1 onion
150 ml cream
70 g grated mild semi-hard cheese
Steps
Preheat a conventional oven (no fan) to 190°C and position a rack in the middle. Slice the potatoes 3 mm thick, cook for 7–8 minutes after the water comes to a boil, until they begin to soften around the edges but are not falling apart, then drain thoroughly.
Cook the bacon and onion over medium heat for 5–6 minutes, until the bacon is browned and the onion has softened.
Layer the potatoes and the bacon with onion in a baking dish, drizzling each layer with some of the cream.
Cover the dish and bake for 20 minutes. Uncover, sprinkle with the cheese, and bake for another 10 minutes, until the potatoes are completely tender when pierced with a knife and the cheese is browned.
Let stand for 5 minutes and serve.
