Ingredients

  • 1 can red beans (about 240 g drained)

  • 30 g finely ground rolled oats

  • 1 tablespoon ground flaxseed

  • 3 tablespoons water

  • 1/2 teaspoon salt

  • 1/2 teaspoon smoked paprika

  • 1/4 teaspoon freshly ground black pepper

  • 1 tablespoon canola oil

  • 4 burger buns

  • 1 tomato

  • a handful of lettuce

Steps

  1. Mix the ground flaxseed with 3 tablespoons of water and let stand for 5 minutes. Drain and dry the beans thoroughly, then mash them with a fork, leaving a few small pieces.

  2. Combine the beans with the finely ground oats, flaxseed gel, salt, smoked paprika, and pepper. Shape into four equal patties and chill them for 25 minutes.

  3. Heat the oil in a large skillet over medium heat. Cook the patties for 4 minutes per side, turning only once, until golden brown and firm.

  4. Split the buns and warm them cut side down in a dry skillet for 2 minutes. Cut the tomato into four slices, and wash and dry the lettuce.

  5. Fill each bun with lettuce, a bean patty, and a slice of tomato. Serve immediately.
