  • 4 flour tortillas

  • 220 g chicken breast

  • 120 g grated mild semi-hard cheese

  • 1 bell pepper

  • 1 tablespoon olive oil

Steps

  1. Cut the chicken into small cubes and the bell pepper into short strips. Heat the olive oil in a skillet and cook the chicken with the bell pepper for 5–7 minutes, until the meat is cooked through and any excess liquid has evaporated.

  2. Divide the chicken and bell pepper over one half of each tortilla, sprinkle with cheese, and fold the tortillas in half.

  3. Cook the quesadillas for 3–4 minutes per side over low heat, until the tortillas are golden and crisp.

  4. Let stand briefly after removing from the skillet so the cheese sets slightly and does not run out when sliced.

  5. Cut into triangles and serve immediately.
