Chicken and rice casserole is a filling meal made with cooked rice, chicken breast, carrot, cream, and grated cheese. Rice absorbs some of the cream sauce, the chicken stays juicy, and the cheese forms a simple baked layer on top. Carrot adds gentle sweetness and keeps the flavor from feeling one-dimensional. It works well when you want a complete chicken-and-rice meal in one baking dish.

250 g cooked rice
250 g chicken breast
1 carrot
150 ml cream
70 g grated mild semi-hard cheese
1 tablespoon canola oil
1/2 teaspoon salt
1/4 teaspoon black pepper
Steps
Preheat a conventional oven (no fan) to 190°C and position a rack in the middle. Use the specified 250 g of already cooked and cooled rice; fluff it with a fork.
Cut the chicken into approximately 1.5 cm cubes and coarsely grate the carrot. Heat the oil in a skillet over medium-high heat, cook the chicken for 6 minutes, add the carrot, and cook for another 2 minutes. Add 1/2 teaspoon salt and 1/4 teaspoon black pepper, then mix thoroughly.
Mix the cooked rice with the chicken, carrot, and cream, then level it in a baking dish.
Sprinkle with the cheese and bake for 15–20 minutes, until the top is golden, the center is hot, and the chicken is fully cooked.
Let stand for 5 minutes and serve.
