Chicken and rice casserole is a filling meal made with cooked rice, chicken breast, carrot, cream, and grated cheese. Rice absorbs some of the cream sauce, the chicken stays juicy, and the cheese forms a simple baked layer on top. Carrot adds gentle sweetness and keeps the flavor from feeling one-dimensional. It works well when you want a complete chicken-and-rice meal in one baking dish.

Ingredients

  • 250 g cooked rice

  • 250 g chicken breast

  • 1 carrot

  • 150 ml cream

  • 70 g grated mild semi-hard cheese

  • 1 tablespoon canola oil

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

Steps

  1. Preheat a conventional oven (no fan) to 190°C and position a rack in the middle. Use the specified 250 g of already cooked and cooled rice; fluff it with a fork.

  2. Cut the chicken into approximately 1.5 cm cubes and coarsely grate the carrot. Heat the oil in a skillet over medium-high heat, cook the chicken for 6 minutes, add the carrot, and cook for another 2 minutes. Add 1/2 teaspoon salt and 1/4 teaspoon black pepper, then mix thoroughly.

  3. Mix the cooked rice with the chicken, carrot, and cream, then level it in a baking dish.

  4. Sprinkle with the cheese and bake for 15–20 minutes, until the top is golden, the center is hot, and the chicken is fully cooked.

  5. Let stand for 5 minutes and serve.
