It is a hearty family dinner that pairs well with pasta, rice, or a simple green salad. The sauce can be prepared ahead, but coat the chicken just before frying so the surface stays crisp.

Chicken and Breading

  • 600 g chicken breasts, cut into 4 even fillets

  • 1 teaspoon salt, divided

  • ½ teaspoon black pepper

  • 100 g all-purpose flour

  • 2 eggs

  • 120 g breadcrumbs

  • 4 tablespoons olive oil or vegetable oil, for frying

Tomato Sauce

  • 1 tablespoon olive oil

  • 1 small onion, finely chopped

  • 2 garlic cloves, finely chopped

  • 500 g tomato passata

  • 1 teaspoon dried oregano

  • ½ teaspoon dried basil

  • ¼ teaspoon sugar

  • ¼ teaspoon salt

For Baking

  • 150 g mozzarella, shredded or torn into pieces

  • 40 g grated Parmesan

Steps

  1. Preheat the oven to 200°C. Cut each chicken breast fillet horizontally into two thinner pieces, or gently pound it to about 1 cm thick. Season the chicken with ½ teaspoon salt and the pepper.

  2. Set out three shallow dishes: one with the flour, one with the beaten eggs, and one with the breadcrumbs. Coat each piece of chicken in the flour, egg, and breadcrumbs in that order, lightly pressing on the breading.

  3. Heat the 4 tablespoons olive oil or vegetable oil in a large skillet over medium heat. Fry the breaded fillets for 2–3 minutes per side, until the breading is golden; the chicken does not need to be fully cooked yet.

  4. Heat 1 tablespoon olive oil in a saucepan over medium heat. Add the onion and cook for about 5 minutes, until softened. Add the garlic, passata, oregano, basil, sugar, and ¼ teaspoon salt, then cook for 10 minutes, until the sauce thickens slightly.

  5. Spread the sauce in a large baking dish. Arrange the fried fillets over the sauce, cover each one with mozzarella, and sprinkle the Parmesan over everything.

  6. Place the dish in the oven preheated to 200°C and bake for 15 minutes, until the chicken is fully cooked, the sauce is visibly bubbling, and the cheese has melted and lightly browned.

  7. Remove the dish from the oven and let it stand for 5 minutes so the sauce can thicken slightly. Serve the hot chicken with some of the sauce, preferably with pasta, rice, or a green salad.
