A delicate yogurt-lime sauce with dill adds freshness, while toasted sesame seeds and mint reinforce the dish's summery character. This quick, filling dish still tastes good after a few hours in the refrigerator and works well for lunch at work, a picnic, or a cold dinner.

Noodles and Protein

  • 300 g soba noodles or whole-wheat spaghetti

  • 400 g chicken breast

  • 1 tablespoon olive oil

  • 1/2 teaspoon salt

  • 1/2 teaspoon freshly ground pepper

  • 1 teaspoon sweet paprika

Vegetables and Add-Ins

  • 1 English cucumber

  • 8 radishes

  • 2 handfuls of mâche (lamb’s lettuce) or baby spinach

  • 3 scallions

  • 2 tablespoons toasted sesame seeds

  • 10 mint leaves

Sauce

  • 200 g thick plain yogurt

  • 2 tablespoons mayonnaise

  • 2 tablespoons lime juice

  • 1 teaspoon finely grated lime zest

  • 1 small garlic clove

  • 1 tablespoon chopped dill

  • 1/2 teaspoon honey

  • 2–3 tablespoons cold water

Steps

  1. Toss the chicken with the olive oil, salt, pepper, and paprika. Cook it in a hot skillet for 6–8 minutes, until golden and cooked through, then set aside to cool completely.

  2. Cook the noodles al dente according to the package directions, drain, and rinse with cold water to cool quickly. Let them drain thoroughly.

  3. Make the sauce by stirring together the yogurt, mayonnaise, lime juice and zest, pressed garlic, dill, honey, and enough cold water to give it a creamy consistency that is thin enough to pour.

  4. Cut the cucumber into half-moons, slice the radishes thinly, chop the scallions, and cut the chicken into thin strips.

  5. In a large bowl, combine the noodles, chicken, cucumber, radishes, lamb’s lettuce, and scallions. Add the sauce and toss gently until everything is evenly coated.

  6. Before serving, sprinkle with the sesame seeds and torn mint leaves. Refrigerate for 15–20 minutes if you want the dish even more refreshing.
