  • 1 zucchini

  • 1 red bell pepper

  • 200 g sausage

  • 300 ml tomato passata

  • 1 onion

Steps

  1. Cut the zucchini and bell pepper into large dice, the onion into thin wedges, and the sausage into half-moons.

  2. Cook the sausage in a dry pot for 2–3 minutes, until it renders some of its fat. Add the onion and cook for another 3–4 minutes, until softened.

  3. Add the zucchini and bell pepper, then cook for another 5–7 minutes, until the vegetables soften slightly.

  4. Pour in the tomato passata and simmer for 10–12 minutes, until the zucchini and bell pepper are tender and the sauce has taken on the flavor of the sautéed sausage.

  5. Serve right away, while the sausage is hot, the pepper is soft, and the zucchini has not fallen apart in the tomato sauce.
