About this recipe

Salmon and lettuce tortilla wraps make a light yet filling lunch and also work well in a lunchbox. Baked salmon provides substance and a delicate fish flavor, lettuce brings freshness, cucumber adds crunch, and yogurt serves as a simple light sauce. Spread a thin layer of yogurt over each tortilla to keep the filling moist without making the wrap soggy too quickly. Leave the salmon in larger pieces so its flavor comes through in every serving. Roll the wraps tightly and serve immediately, or cut them in half to take along.

Ingredients

Servings: 4

  • 4 flour tortillas

  • 200 g baked salmon

  • 1 cucumber

  • a handful of lettuce

  • 2 tablespoons yogurt

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

Steps

  1. Divide the salmon into smaller pieces and cut the cucumber into thin slices or matchsticks.

  2. Arrange the yogurt, lettuce, salmon, and cucumber on the tortillas. Sprinkle the filling with 1/2 teaspoon salt and 1/4 teaspoon black pepper.

  3. Roll the tortillas up tightly, tucking in the filling so it does not fall out when sliced.

  4. Serve right away or cut in half for a lunchbox.
