500 g sweet potato
1 egg
2 tablespoons all-purpose flour
1 tomato
1/2 cucumber
2 tablespoons canola oil (about 24 g), for frying
1/2 teaspoon salt
1/4 teaspoon black pepper
Steps
Peel the sweet potato, grate it on the large holes of a box grater, and thoroughly squeeze out the excess liquid.
Mix the grated sweet potato with the egg and flour just until combined, so the mixture holds together without being dense. Add 1/2 teaspoon salt and 1/4 teaspoon black pepper, then mix thoroughly.
Heat some of the oil in a nonstick skillet. Fry small fritters in batches for 2–3 minutes per side, adding the remaining oil before each subsequent batch. The fritters should be golden brown, with soft sweet potato in the center.
Make a simple vegetable salad and serve it alongside the fritters to add freshness.
Serve the fritters right away with the tomato and cucumber salad, while they are still hot and have slightly crisp edges.
