About this recipe

Tagliatelle with mushrooms and bacon is a hearty dinner in a creamy sauce. Bacon gives the dish a salty, bold flavor, well-browned mushrooms add depth, and onion ties everything together into a simple sauce base. Cook off the mushrooms’ moisture before adding the cream so the sauce does not turn watery. Wide tagliatelle ribbons pick up the mushrooms, bacon, and creamy sauce well. Serve immediately after tossing, while the sauce is hot and coats the pasta evenly.

Ingredients

Servings: 3

  • 250 g tagliatelle

  • 200 g button mushrooms

  • 120 g bacon

  • 120 ml cream

  • 1 onion

Steps

  1. Cook the tagliatelle al dente according to the package directions, usually 7–9 minutes, and reserve a few tablespoons of the cooking water.

  2. In a skillet, sauté the bacon and onion for 5–6 minutes. Add the mushrooms and cook for 5–7 minutes, until everything is lightly browned.

  3. Pour the cream into the bacon and mushrooms, stirring until it combines with the fat in the skillet and thickens slightly.

  4. Add the tagliatelle to the bacon, mushrooms, and cream, then toss so the pasta picks up the sauce from the bottom of the skillet.

  5. Serve immediately, while the bacon still has a distinct flavor and the creamy sauce coats the tagliatelle well.
