About this recipe

Turkey and vegetable tortilla wraps are a convenient meal for home or on the go. Thin strips of turkey cook quickly, bell pepper adds crunch and sweetness, and cucumber provides a fresh, light contrast. Yogurt serves as a simple sauce that binds the filling without making the wraps heavy. Do not overfill the tortillas, and warm them briefly in a dry skillet only if desired. Serve while the meat is warm and the vegetables are fresh.

Ingredients

Servings: 4

  • 4 flour tortillas

  • 250 g turkey breast

  • 1 bell pepper

  • 1/2 cucumber

  • 2 tablespoons yogurt

  • 1 tablespoon canola oil (about 12 g)

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

Steps

  1. Cut the turkey into thin strips, the bell pepper into strips, and the cucumber into thin half-moons.

  2. Heat the oil in a skillet and cook the turkey strips, sprinkled with 1/2 teaspoon salt and 1/4 teaspoon black pepper, over medium-high heat for 6–8 minutes, stirring, until lightly browned and fully cooked in the center.

  3. Spread the tortillas with yogurt, divide the meat and vegetables among them, then roll them up tightly.

  4. If desired, warm the finished tortillas in a dry skillet for 30–60 seconds and serve immediately.
