Quick-cooking bulgur pairs well with the mild turkey without overpowering it. Serve immediately, while the meatballs are hot and the bulgur is still fluffy.

400 g ground turkey
1 egg
2 tablespoons breadcrumbs
120 g bulgur
150 ml tomato passata
1 tablespoon canola oil
1/2 teaspoon salt
1/4 teaspoon black pepper
Steps
Combine the ground turkey with the egg, breadcrumbs, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Shape into 16 even meatballs.
Heat the oil in a large skillet over medium heat. Brown the meatballs for 5–6 minutes, turning them, until browned on several sides.
Meanwhile, cook the bulgur according to the time stated on the package. Pour the tomato passata into the skillet with the meatballs and bring to a gentle simmer.
Cover and simmer the meatballs in the tomato passata over low heat for 8–10 minutes, turning once halfway through. Remove from the heat when the largest meatball is fully cooked through in the center.
Serve right away with the bulgur.
