300 g frozen green peas
300 ml yogurt
300 ml buttermilk
a few mint leaves
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
Steps
Bring water to a boil in a small pot. Keep the yogurt, buttermilk, and mint refrigerated until ready to blend.
Add 300 g frozen green peas to the boiling water and cook for 3 minutes, then drain and cool quickly under cold water.
Transfer the peas to a blender. Add the yogurt, buttermilk, mint, olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Blend for 60–90 seconds, until smooth.
Pour the soup into a covered container and chill for 20 minutes. Stir before serving.
