About this recipe

Chilled green pea soup is a light summer soup blended with yogurt, buttermilk, mint, and olive oil. The peas provide gentle sweetness and a creamy texture after blending, while mint adds freshness and a cooling aroma. Tangy yogurt and buttermilk balance the peas and keep the base bright. It is an appealing alternative to classic chilled cucumber or beet soup for a summer lunch.

Ingredients

Servings: 4

  • 300 g frozen green peas

  • 300 ml yogurt

  • 300 ml buttermilk

  • a few mint leaves

  • 1 tablespoon olive oil

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

Steps

  1. Bring water to a boil in a small pot. Keep the yogurt, buttermilk, and mint refrigerated until ready to blend.

  2. Add 300 g frozen green peas to the boiling water and cook for 3 minutes, then drain and cool quickly under cold water.

  3. Transfer the peas to a blender. Add the yogurt, buttermilk, mint, olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Blend for 60–90 seconds, until smooth.

  4. Pour the soup into a covered container and chill for 20 minutes. Stir before serving.
