Ingredients

  • 500 g button mushrooms

  • 1 onion

  • 1 potato

  • 800 ml vegetable broth

  • 1 teaspoon thyme

  • 2 tablespoons cream

Steps

  1. Slice the button mushrooms, dice the potato, and finely chop the onion.

  2. Heat a dry, wide pot well. Add the mushrooms and cook for 7–9 minutes, until they release their liquid, the liquid evaporates, and they begin to brown. Add the onion and 3 tablespoons of the measured broth, then cook for another 3–4 minutes.

  3. Add the potato, pour in the remaining vegetable broth, and cook for 15–20 minutes, until the potato is completely tender.

  4. Blend the mushrooms with the potato and thyme into a creamy soup. If desired, leave a little texture so the mushrooms are more noticeable.

  5. Stir in the cream and heat briefly, until the soup is smooth.
