Ingredients

Servings: 6

  • 700 g pumpkin

  • 1 onion

  • 1 small potato

  • 800 ml vegetable broth

  • 1 cm ginger

  • 2 tablespoons whipping cream (30% fat)

Steps

  1. Cut the pumpkin into evenly sized cubes, peel and cut the potato into smaller pieces, chop the onion, and grate or very finely chop the ginger.

  2. Cook the onion and ginger for 4 minutes in about 50 ml of the stated 800 ml vegetable broth, until the onion softens and the ginger becomes fragrant.

  3. Add the pumpkin and potato, pour in the remaining broth, and cook for 15–20 minutes, until the vegetables are tender.

  4. Purée the pumpkin, potato, and ginger until completely smooth.

  5. Stir the cream into the puréed pumpkin soup and warm briefly over low heat. Serve immediately.
