250 g dried white beans
200 g sausage
1 carrot
1 onion
1.5 L water
Steps
Soak the white beans overnight and drain. Cut the carrot into half-moons, chop the onion, and cut the sausage into smaller pieces.
In a pot, heat the onion with the sausage for 4–5 minutes, until the onion softens and the sausage lightly browns and becomes fragrant.
Add the soaked beans and carrot, pour in 1.5 L water, and cook over low heat for 50–70 minutes, until the beans are tender.
Let the soup stand for 5 minutes, then serve.
