Polish vegetable barley soup, or krupnik, is a filling meatless soup made with vegetable broth, barley, potatoes, carrot, and celery root. Watch the barley near the end of cooking so it becomes tender without breaking down completely.

Ingredients

Servings: 4

  • 80 g barley

  • 3 potatoes

  • 1 carrot

  • a piece of celery root

  • 1 liter vegetable broth

Steps

  1. Rinse the barley. Dice the potatoes, slice the carrot into half-moons, and cut the celery root into small pieces.

  2. Add the barley to the boiling broth, followed by the carrot and celery root. Cook over low heat for 10 minutes.

  3. Add the potatoes and cook for another 15–18 minutes, until the potatoes and barley are tender but retain their texture.

  4. Stir the soup well from the bottom of the pot. If it is too thick, add a small amount of hot water and serve immediately.
