  • 180 g red lentils

  • 1 onion

  • 900 ml vegetable broth

  • 150 ml coconut milk

  • 1 teaspoon curry powder

Steps

  1. Rinse the red lentils in a sieve, finely chop the onion, and have the coconut milk, broth, and curry powder ready to add during cooking.

  2. Cook the onion and curry powder for 3–4 minutes in 3 tablespoons of the broth, until the onion softens and the curry becomes fragrant.

  3. Add the rinsed lentils, pour in the remaining broth, and cook for 12–15 minutes, until the lentils begin to soften and thicken the soup.

  4. Pour in the coconut milk and cook for another 3–4 minutes, until it is evenly combined with the curry and lentils.
