About this recipe

Spicy tomato soup with chickpeas is a thick, warming soup made with tomato passata and vegetable broth. Chickpeas make it filling without pasta or rice, while chili gives it a noticeable but mild kick. Olive oil brings out the flavor of the tomato base and rounds out the soup. It is a substantial variation on simple tomato soup made from a short ingredient list.

Ingredients

Servings: 4

  • 1 liter vegetable broth

  • 500 ml tomato passata

  • 1/2 can chickpeas

  • 1/2 teaspoon chili

  • 1 tablespoon olive oil

Steps

  1. Drain and rinse the chickpeas, and have the tomato passata, broth, chili, and olive oil ready beside the pot.

  2. Heat the olive oil in a pot, add the chili and tomato passata, and cook for 2 minutes, stirring. Pour in the broth and bring to a boil.

  3. Add the chickpeas and cook over low heat for 8–10 minutes, until thoroughly heated and the flavors have blended.

  4. Taste the soup and serve once the chickpeas are hot and the tomato base has an even consistency.
