  • 4 eggs

  • 1 tablespoon butter or olive oil

  • 2 slices sandwich bread

  • 1/2 red bell pepper

  • 40 g cheddar cheese

Steps

  1. Finely dice the bell pepper, grate or finely chop the cheddar, and beat the eggs in a bowl.

  2. Heat the butter or olive oil in a skillet and cook the bell pepper for 2–3 minutes, until slightly softened.

  3. Pour the eggs over the softened bell pepper and cook slowly, stirring gently, so they set evenly before you add the cheddar.

  4. Near the end of cooking, add the cheddar, stir briefly, and serve right away with the bread.
