  • 4 eggs

  • 1 tablespoon butter or olive oil

  • 2 slices bread, for serving

  • 2 handfuls spinach

  • 6 cherry tomatoes

  • salt and pepper, to taste

Steps

  1. Halve the cherry tomatoes, then rinse and thoroughly dry the spinach.

  2. Heat the butter or olive oil in a skillet and cook the cherry tomatoes for about a minute. Add the spinach and stir just until wilted.

  3. Move the vegetables to the sides of the skillet, crack in the eggs, and cook over low heat for 3–5 minutes, until the whites are set and the yolks remain runny or slightly creamy.

  4. Season with salt and pepper, then serve right away with the bread.
