Cream
250 g mascarpone
250 g thick plain yogurt
40 g powdered sugar
1 teaspoon vanilla extract
Fruit and layers
400 g strawberries
2 tablespoons lemon juice
8 sponge cookies
2 tablespoons sliced almonds
For finishing
8 mint leaves
Steps
Wash and hull the strawberries. Set aside about 100 g for garnish, cover, and refrigerate. Blend the remaining strawberries with the lemon juice into a smooth puree.
Mix the mascarpone, plain yogurt, powdered sugar, and vanilla extract briefly on low speed, just until smooth. Add the strawberry puree and fold with a spatula until evenly combined.
Divide the mixture among four dessert glasses suitable for freezing, cover, and freeze for 3 hours and 30 minutes. Break the sponge cookies into large pieces and store them in an airtight container so they stay dry.
Remove the desserts from the freezer 10–15 minutes before serving. Once the mixture has softened slightly around the edges, garnish with the reserved strawberries, crumbled sponge cookies, sliced almonds, and mint leaves.
