Roasted Plums
500 g plums
2 tablespoons brown sugar
1 teaspoon cinnamon
1 tablespoon lemon juice
Vanilla Cream
250 g mascarpone
200 g thick plain yogurt
2 tablespoons powdered sugar
1 teaspoon vanilla extract
Crumble
80 g all-purpose flour
50 g cold butter
40 g sliced almonds
30 g sugar
a pinch of salt
For Serving
a few mint leaves, for garnish
Steps
Preheat the oven to 200°C. Wash the plums, halve them, and remove the pits, then toss them with the brown sugar, cinnamon, and lemon juice. Transfer to an ovenproof dish.
In a separate bowl, combine the flour, sugar, salt, and cold butter. Rub together with your fingers until a coarse crumble forms, then stir in the sliced almonds.
Spread the crumble over a parchment-lined baking sheet and bake for 10–12 minutes, until golden. Set aside to cool.
Bake the plums for 15–18 minutes, until softened and juicy but still holding their shape. Remove and let cool slightly.
Stir the mascarpone with the yogurt, powdered sugar, and vanilla until smooth. Do not mix for too long so the cream remains fluffy.
Layer the cream, roasted plums, and crumble in dessert cups. Repeat the layers if the cups are deeper, then arrange the mint leaves on top. Serve immediately or after chilling in the refrigerator for 20 minutes.
