Vanilla cream
250 g mascarpone
200 g Greek yogurt
2 tablespoons powdered sugar
1 teaspoon vanilla paste or vanillin sugar
1 tablespoon lemon juice
Pears
3 medium pears (about 450 g)
1 tablespoon butter
2 tablespoons honey
1/2 teaspoon cinnamon
1 tablespoon lemon juice
Extras
80 g butter cookies
30 g unsalted pistachios, chopped
Steps
Prepare the pears: peel and core them, then cut them into cubes. Toss with 1 tablespoon of the lemon juice to prevent browning.
Melt the butter in a skillet, then add the pears, honey, and cinnamon. Cook over medium heat for 6–8 minutes, until the fruit is tender but not completely broken down. Set aside to cool.
In a bowl, mix the mascarpone, Greek yogurt, powdered sugar, vanilla, and 1 tablespoon of lemon juice until smooth.
Crumble the butter cookies into small pieces. Set out 4 dessert glasses and sprinkle a little of the cookies into the bottom of each one.
Spoon a layer of vanilla cream over the cookies, followed by the pears and a little of the syrup from the skillet. Repeat the layers if the glasses are tall enough.
Sprinkle the tops with pistachios and refrigerate the desserts for 20–30 minutes so they chill slightly and the flavors meld.
