Plum cake is a soft cake with plenty of plums, made with all-purpose flour, eggs, sugar, and plant-based butter. The plums add moisture and a slightly tart flavor that balances the sweetness of the batter. Baking powder helps create a lighter texture, while the fruit softens and sinks slightly into the cake as it bakes. Slice only after the cake has cooled and the plum juices no longer seep from it.

  • 220 g all-purpose flour

  • 2 eggs

  • 120 g sugar

  • 500 g plums

  • 80 g plant-based butter

  • 1 teaspoon baking powder

Steps

  1. Before mixing the batter, preheat the oven to 180°C and line a baking pan with parchment paper.

  2. Combine the eggs with the sugar and softened plant-based butter, mixing briefly so the mixture is even but not overly aerated.

  3. Add the flour and baking powder and mix only until a thick, smooth batter forms.

  4. Pit the plums and arrange them on the batter, skin-side down, pressing them lightly into the surface.

  5. Bake the plum cake for 35–45 minutes, until the center is springy and a toothpick comes out clean.

  6. Slice only after cooling, when the plum juices are no longer making the top soft.
