  • 220 g all-purpose flour

  • 2 carrots

  • 2 eggs

  • 80 ml oil

  • 60 g walnuts

  • 100 g sugar

  • 1 teaspoon baking powder

Steps

  1. Preheat the oven to 180°C, and line the pan with parchment paper or lightly grease it.

  2. Stir the eggs with the sugar and oil, and finely grate the carrots.

  3. Briefly mix in the flour and baking powder so the carrot batter does not become unnecessarily thick.

  4. Fold in the grated carrots and chopped walnuts just until evenly distributed through the batter.

  5. Bake the carrot cake with walnuts for 35–45 minutes, until the center is springy and a toothpick comes out clean.

  6. Let the cake cool completely for 30–45 minutes before slicing because the warm carrots hold a lot of moisture.
