This strawberry pudding is a fruit variation of homemade milk pudding, made with egg yolks, potato starch, and fresh strawberries. The berries add natural sweetness, color, and light tartness, giving the dessert a fresher, lighter flavor. Mash or briefly blend them before combining with the milk so their flavor is evenly distributed. Cook only until thickened to preserve the fresh strawberry taste.

350 ml milk
150 g strawberries
2 egg yolks
2 tablespoons potato starch
2 tablespoons sugar
Steps
Combine about 150 ml cold milk with the egg yolks, sugar, and starch, mixing thoroughly, as this base will later be combined with the warm milk and strawberries.
Mash or briefly blend the strawberries; heat them with the remaining milk—about 200 ml—for 2–3 minutes, just until the mixture is warm.
Pour the starch mixture into the warm milk with the strawberries and stir until the color and consistency are even.
Cook the strawberry pudding over low heat for 1–2 minutes, until thickened and the raw starch taste is gone.
Serve right away, or pour the strawberry pudding into bowls and chill for 20–30 minutes if you would like it to be more set.
