Chocolate pudding is a classic homemade dessert made with milk, egg yolks, and cocoa, with no packaged mix required. Cocoa gives it a deep dessert flavor, while potato starch creates a thick, creamy consistency. The egg yolks make the pudding richer and more velvety than a version made with only milk and starch. Cook it briefly over low heat, stirring constantly, until thick and smooth.
Ingredients
Servings: 4
500 ml milk
2 egg yolks
2 tablespoons sugar
2 tablespoons potato starch
1 tablespoon cocoa powder
Steps
Pour about 150 ml cold milk into a bowl, add the egg yolks, sugar, and starch, and whisk until the thickening mixture is smooth.
Take 3–4 tablespoons from the milk as it heats and mix them with the cocoa, then stir the paste back into the remaining milk, about 350 ml.
Once the cocoa milk is hot, slowly pour in the egg-and-starch mixture and immediately stir along the bottom of the saucepan.
Cook the chocolate pudding over low heat for 1–2 minutes, until thickened and no longer tasting of raw starch.
Pour the chocolate pudding into small bowls and serve with fruit or plain.
