This coffee pudding is a homemade milk dessert made with egg yolks, potato starch, sugar, and instant coffee. Coffee cuts through the sweetness and gives the pudding a distinct, lightly bitter aroma and more intense flavor. Whisk the starch into the cold portion of the milk before adding it to the hot coffee base. Cook briefly over low heat until smooth and noticeably thickened.

Ingredients

Servings: 4

  • 500 ml milk

  • 2 egg yolks

  • 2 tablespoons potato starch

  • 1 teaspoon instant coffee

  • 2 tablespoons sugar

Steps

  1. Whisk together part of the cold milk, the egg yolks, sugar, and starch to make a smooth slurry; it should be thoroughly mixed before adding it to the milk with the dissolved coffee.

  2. Heat the remaining milk—about 350 ml—for 2–3 minutes and dissolve the coffee in it before adding the thickening mixture.

  3. Once the coffee has dissolved, reduce the heat and pour in the starch mixture, moving the whisk across the entire bottom of the pan.

  4. Cook the coffee pudding for 1–2 minutes over low heat, until thickened and no longer tasting of raw starch.

  5. Serve as a dessert for adults, preferably after cooling slightly.
