500 ml milk
2 egg yolks
2 tablespoons sugar
2 tablespoons potato starch
a pinch of vanilla
Steps
In a bowl, whisk the egg yolks with the sugar and starch, gradually adding about 150 ml cold milk until the mixture is smooth and lump-free.
Heat the remaining milk—about 350 ml—with the vanilla for 2–3 minutes, until it begins to steam noticeably.
Temper the egg mixture with 2–3 tablespoons hot milk, then pour it into the saucepan while stirring constantly.
Cook the vanilla pudding over low heat for 1–2 minutes, until thickened and no longer tasting of raw starch.
Serve warm or chill in small bowls for 20–30 minutes; pressing plastic wrap directly onto the surface helps prevent a skin from forming.
