2 salmon fillets
120 g rice
1 small head of broccoli
1 lemon
1 tablespoon olive oil
1/4 teaspoon salt
1/8 teaspoon black pepper
Steps
Cook the rice according to the package timing and leave covered. Preheat the oven to 200°C using a conventional oven with no fan, and position a rack in the middle.
Pat the salmon fillets dry, season with 1/4 teaspoon salt and 1/8 teaspoon black pepper, drizzle with olive oil, place in a baking dish skin-side down, and bake for 10–12 minutes, until the flesh is cooked through and begins to flake easily.
Cut the broccoli into even florets and steam for 3–4 minutes, until bright green and crisp-tender.
Drizzle the baked salmon with juice from half the lemon; cut the remaining lemon into wedges.
Serve the salmon immediately with the rice, broccoli, and lemon wedges.
