This simple fish dinner works well when you want a complete meal without a heavy sauce or complicated sides.

Ingredients

Servings: 2

  • 2 salmon fillets

  • 120 g couscous

  • 2 handfuls of spinach

  • 1 garlic clove

  • 1 tablespoon olive oil

  • 1/4 teaspoon salt

  • 1/8 teaspoon black pepper

Steps

  1. Preheat a conventional oven (no fan) to 200°C and set the rack in the middle. Pour 120 ml of boiling water over the couscous, cover for 5 minutes, then fluff with a fork.

  2. Pat the salmon fillets dry, season them with 1/4 teaspoon salt and 1/8 teaspoon black pepper, brush with 2 teaspoons of the olive oil, and place them skin-side down in a baking dish. Bake for 10–12 minutes, until the fish is cooked through and begins to flake easily.

  3. Heat the remaining 1 teaspoon of olive oil in a skillet over medium heat. Add the finely chopped garlic, then add the spinach after 20 seconds. Cook for 2–3 minutes, until the leaves wilt and any visible liquid evaporates.

  4. Mix the couscous with the spinach and divide it between two plates. Place one salmon fillet on each portion.

  5. Serve immediately.
