2 salmon fillets
1 zucchini
1 bell pepper
1 onion
1 tablespoon olive oil
1/4 teaspoon salt
1/8 teaspoon black pepper
Steps
Preheat the oven to 200°C on the convection setting and position a rack in the middle. Cut the zucchini into 1.5 cm-thick half-moons, the bell pepper into pieces about 2 cm wide, and the onion into eighths. Toss the vegetables with the olive oil and spread them in a single layer on a baking sheet.
Roast the vegetables for 15 minutes. Then push them to the sides of the baking sheet and place the patted-dry salmon fillets in the center, seasoned with 1/4 teaspoon salt and 1/8 teaspoon black pepper. Roast everything for another 10–12 minutes, until the vegetables are browned and the salmon is cooked through and begins to flake easily.
Transfer the salmon whole to plates, and gently toss the vegetables on the baking sheet.
Divide the hot vegetables alongside the salmon fillets.
Serve immediately.
