  • 4 bell peppers

  • 120 g bulgur

  • 80 g feta cheese

  • 1 zucchini

  • 1 tablespoon olive oil

Steps

  1. Preheat a conventional oven (no fan) to 190°C and position a rack in the middle. Cut the bell peppers in half lengthwise, remove the seeds and membranes, and arrange them in a baking dish.

  2. Cook the bulgur for 10–12 minutes according to the package instructions. Dice the zucchini and sauté it in the olive oil for 5–7 minutes, until any visible liquid has evaporated. Mix with the bulgur and crumbled feta.

  3. Divide the filling among the 8 bell pepper halves and arrange them snugly in the dish.

  4. Bake for 25–30 minutes, until the peppers are tender when pierced and the top of the filling is lightly browned.

  5. Let stand for 5 minutes and serve 2 halves per portion.
