About this recipe
Bulgur and feta stuffed bell peppers are a colorful oven meal filled with bulgur, zucchini, feta, and olive oil. Bulgur provides a filling base, zucchini adds moisture, and feta contributes a bold salty note. The peppers soften and become sweeter as they bake, balancing the simple filling. These meatless stuffed peppers make a complete meal in individual portions.
Ingredients
Servings: 4
4 bell peppers
120 g bulgur
80 g feta cheese
1 zucchini
1 tablespoon olive oil
Steps
Preheat a conventional oven (no fan) to 190°C and position a rack in the middle. Cut the bell peppers in half lengthwise, remove the seeds and membranes, and arrange them in a baking dish.
Cook the bulgur for 10–12 minutes according to the package instructions. Dice the zucchini and sauté it in the olive oil for 5–7 minutes, until any visible liquid has evaporated. Mix with the bulgur and crumbled feta.
Divide the filling among the 8 bell pepper halves and arrange them snugly in the dish.
Bake for 25–30 minutes, until the peppers are tender when pierced and the top of the filling is lightly browned.
Let stand for 5 minutes and serve 2 halves per portion.
