About this recipe
Chicken and egg fried rice is a quick dinner made with cooked rice, chicken breast, eggs, carrot, and soy sauce. Rice cooked ahead of time fries well in a skillet and mixes easily with the chicken and eggs. Soy sauce gives the dish a savory flavor, while the carrot adds mild sweetness and color. It is a filling dairy-free meal built from a simple base.
Ingredients
Servings: 3
250 g cooked rice
220 g chicken breast
2 eggs
1 carrot
1 tablespoon soy sauce
1 tablespoon canola oil (about 12 g)
Steps
Have the cooked rice ready, preferably slightly cooled.
Heat half of the oil in a large skillet and cook the chicken for 5–7 minutes, until almost cooked through.
Add the remaining oil and the carrot; cook for 2 minutes, then crack in the eggs and stir until fully set.
Add the rice and soy sauce, then cook for another 2–3 minutes.
Serve right away, while the rice is hot, the egg has set into small pieces, and the soy sauce evenly coats the chicken and carrot.
