Ingredients

Servings: 3

  • 250 g cooked rice

  • 220 g chicken breast

  • 2 eggs

  • 1 carrot

  • 1 tablespoon soy sauce

  • 1 tablespoon canola oil (about 12 g)

Steps

  1. Have the cooked rice ready, preferably slightly cooled.

  2. Heat half of the oil in a large skillet and cook the chicken for 5–7 minutes, until almost cooked through.

  3. Add the remaining oil and the carrot; cook for 2 minutes, then crack in the eggs and stir until fully set.

  4. Add the rice and soy sauce, then cook for another 2–3 minutes.

  5. Serve right away, while the rice is hot, the egg has set into small pieces, and the soy sauce evenly coats the chicken and carrot.
