About this recipe
Chicken in dill sauce is a mild dinner with chicken breast, rice, onion, and a creamy sauce made with plenty of dill. Cream forms the smooth sauce base, dill adds freshness, and rice soaks up the sauce from the plate. The ingredient list is simple, but the sauce makes the dish more substantial than plain skillet chicken, while adding tenderness and home-style character. It works well as a quick chicken-and-rice dinner, especially when you want something mild.
Ingredients
Servings: 4
300 g chicken breast
150 ml cream
1 bunch dill
120 g uncooked rice
240 ml water
1 onion
1 tablespoon canola oil
1/2 teaspoon salt
Steps
Rinse the rice, transfer it to a small saucepan, and pour in 240 ml water. Bring to a boil, cover, and cook over low heat for 12 minutes. Turn off the heat and let stand, covered, for another 5 minutes.
Cut the chicken into pieces about 2 cm on each side. Heat the oil in a large skillet over medium-high heat and cook the chicken for 5–6 minutes, stirring, until lightly browned.
Add the finely chopped onion, reduce the heat to medium, and cook for 3 minutes.
Pour in the cream, add the salt, and cook over low heat for 5–7 minutes, until the thickest piece of chicken is fully cooked through. Add the chopped dill during the final minute of cooking.
Divide the rice, chicken, and sauce into four equal portions and serve immediately.
