2 cod fillets
300 ml tomato passata
1 onion
1 garlic clove
120 g bulgur
1 tablespoon olive oil (about 12 g)
1/4 teaspoon salt
1/8 teaspoon black pepper
Steps
Cook the bulgur for 10–12 minutes so it is ready to serve with the fish and sauce.
Pat the cod dry and season with 1/4 teaspoon salt and 1/8 teaspoon black pepper. Heat half the olive oil in a skillet and cook the fish for 2–3 minutes per side, until the flesh has almost completely lost its translucency. Transfer to a plate.
In the remaining olive oil, cook the onion for 3–4 minutes. Add the garlic for 30 seconds, then pour in the tomato passata and simmer the sauce for 5 minutes.
Place the cod in the sauce and cook over low heat for another 2–3 minutes, until fully cooked and beginning to flake easily.
Serve immediately with the bulgur.
