About this recipe

Cod in tomato sauce is a lighter dinner made with cod fillets, tomato passata, onion, garlic, and bulgur. The delicate fish pairs well with the simple tomato sauce, while the garlic and onion give it a more home-style, pronounced flavor. Bulgur is a filling side that picks up the sauce from the plate well and makes the dish a complete meal. This is a good recipe for cod in sauce when you want to prepare fish without breading or heavy additions.

Ingredients

Servings: 2

  • 2 cod fillets

  • 300 ml tomato passata

  • 1 onion

  • 1 garlic clove

  • 120 g bulgur

  • 1 tablespoon olive oil (about 12 g)

  • 1/4 teaspoon salt

  • 1/8 teaspoon black pepper

Steps

  1. Cook the bulgur for 10–12 minutes so it is ready to serve with the fish and sauce.

  2. Pat the cod dry and season with 1/4 teaspoon salt and 1/8 teaspoon black pepper. Heat half the olive oil in a skillet and cook the fish for 2–3 minutes per side, until the flesh has almost completely lost its translucency. Transfer to a plate.

  3. In the remaining olive oil, cook the onion for 3–4 minutes. Add the garlic for 30 seconds, then pour in the tomato passata and simmer the sauce for 5 minutes.

  4. Place the cod in the sauce and cook over low heat for another 2–3 minutes, until fully cooked and beginning to flake easily.

  5. Serve immediately with the bulgur.
