Cooked potatoes, flour, and egg form the soft dough, which should be mixed quickly without overworking it. Sautéed button mushrooms develop deeper flavor, and cream turns them into a simple sauce that coats the dumplings. Cook the kopytka in batches and remove them a few minutes after they float to the surface so they remain tender. Serve immediately with the hot mushroom sauce.
Ingredients

800 g cooked potatoes
180 g all-purpose flour
1 egg
250 g button mushrooms
120 ml cream
1 tablespoon canola oil (about 12 g)
1/2 teaspoon salt
1/4 teaspoon black pepper
Steps
Press the still-warm potatoes through a potato ricer or mash them thoroughly, then let cool slightly.
Add the flour, egg, and 1/2 teaspoon salt. Quickly knead into a soft dough, and do not knead longer than necessary.
Shape into ropes, cut into kopytka, and cook in batches for 2–3 minutes after they rise to the surface.
Meanwhile, heat the oil in a skillet and cook the button mushrooms for 5–7 minutes. Add 1/4 teaspoon black pepper, pour in the cream, and simmer for 3–4 minutes, until the sauce thickens slightly.
Combine the cooked kopytka with the mushroom sauce and serve immediately.
