Butter warmed with sage leaves develops an intense herbal aroma that complements the mild potatoes. Cook the kopytka in batches and remove them shortly after they float to the surface. Serve immediately, drizzled with hot sage butter.

800 g cooked potatoes
180 g all-purpose flour
1 egg
40 g butter
a few sage leaves
1/2 teaspoon salt
1/4 teaspoon black pepper
Steps
Press the still-warm potatoes through a potato ricer or mash them thoroughly, then let cool slightly.
Add the flour, egg, and 1/2 teaspoon salt; quickly knead into a soft dough, and do not work it longer than necessary.
Shape into ropes, cut into kopytka, and cook in batches for 2–3 minutes after they rise to the surface.
In a small skillet, melt the butter with the sage leaves and 1/4 teaspoon black pepper. Warm for 1–2 minutes, until the butter becomes fragrant.
Drizzle the kopytka with the sage butter and serve right away.
