Ingredients

Servings: 4

  • 800 g cooked potatoes

  • 180 g all-purpose flour

  • 1 egg

  • 40 g butter

  • a few sage leaves

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

Steps

  1. Press the still-warm potatoes through a potato ricer or mash them thoroughly, then let cool slightly.

  2. Add the flour, egg, and 1/2 teaspoon salt; quickly knead into a soft dough, and do not work it longer than necessary.

  3. Shape into ropes, cut into kopytka, and cook in batches for 2–3 minutes after they rise to the surface.

  4. In a small skillet, melt the butter with the sage leaves and 1/4 teaspoon black pepper. Warm for 1–2 minutes, until the butter becomes fragrant.

  5. Drizzle the kopytka with the sage butter and serve right away.
