Millet and vegetable patties are a meatless meal made with cooked millet, carrot, zucchini, egg, and breadcrumbs. Cold millet provides a firm base, while thoroughly squeezing the zucchini removes excess moisture. Briefly chilling the shaped patties helps them retain their shape during frying. Serve immediately while they are lightly crisp outside and soft inside.

Ingredients

Servings: 4

  • 180 g cooked and completely cooled millet

  • 1 carrot

  • 1 egg

  • 2 tablespoons breadcrumbs

  • 1 medium zucchini (about 300 g)

  • 2 tablespoons canola oil

  • 1/2 teaspoon salt

Steps

  1. Coarsely grate the zucchini, sprinkle it with some of the listed salt, and let stand for 5 minutes. Then squeeze it very thoroughly with your hands or in a clean kitchen towel. Finely grate the carrot.

  2. Combine the squeezed zucchini and carrot with the cold millet, egg, and breadcrumbs. Shape into 12 small patties and chill them for 10 minutes.

  3. Heat 1 tablespoon of oil in a large skillet over medium heat. Cook the first batch for 3–4 minutes per side. Repeat with the remaining oil and the second batch; turn the patties only when the undersides are golden brown and firm.

  4. Transfer the cooked patties to a wire rack or paper towel for 2 minutes.

  5. Serve three patties per portion.
