Chickpea patties with slaw are a simple meatless meal built around a satisfying mixture of chickpeas, egg, breadcrumbs, and carrot. Mashed chickpeas provide a firm base, while carrot adds gentle sweetness and moisture. If the mixture is too soft, chill it briefly before shaping so the patties retain their shape better during pan-frying or baking. Napa cabbage adds a fresh, crisp contrast to the warm patties. Serve immediately while the patties are golden brown outside and soft inside.
Ingredients

1 can chickpeas (about 240 g drained)
1 egg
2 tablespoons breadcrumbs
1 carrot
1/2 head napa cabbage
1 small apple
2 tablespoons canola oil
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Steps
Preheat a conventional oven (no fan) to 200°C. Drain the chickpeas thoroughly and mash them with a fork. Finely grate the carrot and combine it with the chickpeas, egg, breadcrumbs, half the salt, and the pepper.
Shape the mixture into eight equal patties, arrange them on a parchment-lined baking sheet, and brush them with 1 tablespoon of oil.
Bake on the middle rack for 18–22 minutes, turning the patties halfway through, until golden brown and firm.
While the patties bake, thinly shred the cabbage and cut the apple into thin matchsticks. Toss them with the lemon juice, the remaining 1 tablespoon of oil, and the rest of the salt.
Serve two warm patties with one-quarter of the fresh slaw.
