About this recipe
Egg patties with potatoes are a simple, budget-friendly meal made with hard-boiled eggs, onion, breadcrumbs, and buttered potatoes. The eggs create a delicate patty base, the onion adds flavor, and the breadcrumbs help the patties retain their shape during frying. Potatoes are the classic, filling side that turns the dish into a complete home-style meal. This is a good option when you want a meatless meal that is still substantial and easy to reheat.
Ingredients
Servings: 5
5 hard-boiled eggs
1 raw egg
2 tablespoons breadcrumbs
1 onion
2 tablespoons canola oil
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
500 g potatoes
1 tablespoon butter
Steps
Peel the potatoes and cook them in water for 18–22 minutes after the water comes to a boil. Meanwhile, finely chop the hard-boiled eggs and onion.
Heat 1 teaspoon of oil in a skillet and cook the onion over medium heat for 3 minutes. Let it cool slightly, then combine it with the chopped eggs, raw egg, breadcrumbs, salt, and pepper.
Shape five equal patties, pressing the mixture firmly between your hands, and chill for 20 minutes. Heat the remaining oil in the same skillet and cook the patties over medium heat for 4 minutes per side, turning only once.
Drain the potatoes, add the butter, and toss gently to coat them evenly.
Serve one patty with one-fifth of the potatoes.
