Fry the cod fillets briefly, only until the coating is browned, because cod dries out easily when overcooked. Mashed potatoes with butter balance the crisp breadcrumb layer well. This simple recipe is a classic fish dinner without a heavy sauce or lengthy baking.

Ingredients

  • 2 cod fillets, about 150 g each

  • 1 egg

  • 3 tablespoons breadcrumbs

  • 2 tablespoons canola oil

  • 500 g potatoes

  • 1 tablespoon butter

  • 1/2 teaspoon salt

Steps

  1. Peel the potatoes, cut them into cubes, and place them in a pot. Cover with water, add 1/4 teaspoon salt, and cook for 15–18 minutes after the water comes to a boil, until completely tender.

  2. While the potatoes cook, pat the fillets dry and season them with the remaining salt. Beat the egg in a shallow dish. Dip each fillet in the egg, then coat thoroughly in breadcrumbs.

  3. Heat the oil in a skillet over medium heat. Fry the fillets for 3–4 minutes per side, turning only once, until the coating is golden and the fish is fully cooked and begins to flake easily.

  4. Before draining the potatoes, reserve about 100 ml of the cooking water. Drain the potatoes, add the butter, and mash, gradually adding 60–100 ml of the reserved water until the mashed potatoes are smooth.

  5. Let the fried fillets rest on a rack or paper towel for 2 minutes. Serve one fillet with half of the mashed potatoes.
