About this recipe

Rice with tofu and broccoli is a quick plant-based dinner built around a simple rice base, a green vegetable, and savory soy sauce. Once pan-fried, the tofu becomes firmer and browned, the broccoli adds freshness and crunch, and the rice mellows the saltiness of the sauce. Brown the tofu first, then add the broccoli later so it does not overcook in the pan. Stir in the soy sauce at the end, once the rice, tofu, and broccoli are combined. Serve right away while the broccoli is still slightly firm and the tofu pieces still stand out.

Ingredients

Servings: 2

  • 120 g rice

  • 180 g tofu

  • 1 small head of broccoli

  • 1 tablespoon soy sauce

  • 1 tablespoon oil

Steps

  1. Cook the rice and let it stand for a few minutes so excess steam can escape before mixing it with the tofu, broccoli, and soy sauce.

  2. Heat the oil in a skillet and cook the tofu for 5–6 minutes, turning the cubes, until browned on several sides.

  3. Add small broccoli florets and 2 tablespoons of water. Cover the skillet and steam for 3–4 minutes, until the broccoli softens but remains slightly firm.

  4. Combine everything with the rice and soy sauce, then mix thoroughly.

  5. Serve right away, while the tofu is still lightly browned, the broccoli is firm, and the soy sauce is evenly mixed through the rice.
