400 g cod
2 carrots
1 parsley root
300 ml tomato passata
1 onion
2 tablespoons canola oil
1/2 teaspoon salt
1/4 teaspoon black pepper
Steps
Cut the carrots and parsley root into thin matchsticks and slice the onion into thin wedges. Heat 1 tablespoon of oil in a large skillet over medium heat and cook the vegetables for 7–8 minutes, stirring.
Add the tomato passata and simmer over low heat for 10–12 minutes, until the vegetables are tender and the sauce is thick.
Pat the cod dry, divide it into 4 equal portions, and season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Heat the remaining 1 tablespoon of oil in a second skillet over medium heat and cook the fish for about 3–4 minutes per side, until cooked through and beginning to flake easily.
Arrange the fish on plates and spoon the hot vegetables in tomato sauce over it.
Serve immediately, with 1 portion of cod per person.
